| Ingredients | |
| 1 Onion (Lg Yellow) | 1/2 to 1 lb. Smoked Sausage |
| 3 pods Garlic (3=5) | 3 cans Chicken Broth (Liquid) |
| 3 stalks Celery (3=7) | 1 Old Worn Out Chicken* |
| Gob'O Parsley | Salt, Black & Red Pepper |
| 1 Bell Pepper | 3 cans Trappey's Cut Okra & Tomatoes |

Bone the chicken. Chop up the vegetables. Make the roux. Wilt/sauté onion and garlic in roux when roux is close to done. Transfer roux to larger pot if not already large enough. Dump in the chicken broth, stirring. Dump in Okra. Dump in the chicken and sausage. Salt and pepper to taste. Cook for about an hours. 30 minutes before serving dump in celery, parsley. If it looks like there's not enough liquid, add appropriate amount. 1/2 to 1 capful of Zatarain's Liquid Crab boil is a nice touch. *Old Worn-out Chicken = one of
